Tojiro Sashimi Knife is a high-quality Japanese knife specially designed to cut raw fish.   Blade is flat on the flip side and honed at an angle on one side. The blade is 300mm (11.8") long made out of stainless steel. Handle is made out of bleached wood with a black plastic bolster. Name of the series is inscribed onto the blade in Japanese.  The length, thickness, unstickiness, hardness and toughness all meet the requirements to slice a raw fish.
